Beef Stroganoff - Debi W.


1 lb round steak (stew meat is ok) and sprinkle 2 T flour on meat
2 T olive oil (shortening is ok)
1/2 c. chopped onion
1 clove minced garlic
1 6oz can mushrooms
1 can cream of mushroom soup
1 T. worchestershire
1/2 T. salt
1/8 tsp. pepper
1/2 c. sour cream

Melt shortening in pan and add meat. Brown floured meat, add onion, garlic and mushrooms. Combine remaining ingredients except sour cream and pour over the meat. Simmer until tender about 1 hour. Add sour cream just before serving. Serve over rice or noodles.

Mayonnaise or Miracle Whip

Chicken Tenders

Tomatoes

Cheese

Lettuce

Cook chicken tenders as directed on package. Spread miracle whip or mayonnaise on tortillas. Top with chicken, tomatoes, cheese, and lettuce. Roll up and serve.

Bagel Sandwiches - Kristi D.

Toast buttered bagels in broiler oven until light brown. Top one side with deli meat, cheese, tomatoes and whatever you wish. Return to oven and broil on high until cheese melts. Quick and Easy!

Sweet Pork Burritos - Heather G.

Sweet Pork

1 (3 pound) boneless pork loin roast

½ tsp salt

2 (4 oz) cans diced green chile peppers

3 cloves garlic, crushed

¼ cup chipotle sauce

½ cup water

Place the roast in a crock pot and season with salt. Place chile peppers and garlic on top of roast. Pour in chipotle sauce and water. Cover and cook 7 hours on low.

After it is cooked, shred the pork and add ¼ - ½ can mild green chile enchilada sauce and brown sugar. The brown sugar is added to taste, but you need at least 1 cup.

Cilantro Lime Rice

2 ¾ cups water

1 ½ cups uncooked long grain white rice

¼ cup fresh lime juice

¼ cup chopped cilantro

In a pot, bring the water and rice to a boil. Mix in the lime juice and cilantro, reduce heat to low, cover, and simmer 20 minutes.

Note: If you use a rice cooker to cook your rice, then add the lime juice and cilantro after it is finished cooking in the rice cooker.

Sweet Pork Burritos: Place rice, black beans, pork, cheese on tortilla. Roll up and heat in microwave or in oven. If you want it smothered, pour some of the enchilada sauce on top and put cheese on top. Can also add lettuce, sour cream, salsa, etc.

Spaghetti Pie - Heather G.


Spaghetti Pie


6oz spaghetti 2 tbsp butter or margarine

1/3 cup parmesan cheese 2 eggs, well-beaten

8 oz cottage cheese 1 lb ground beef or sausage

½ cup onion, chopped ½ cup mozzarella cheese, shredded


Cook spaghetti according to package; drain. Stir butter or margarine into hot spaghetti. Stir in parmesan cheese and eggs. Form spaghetti into a “crust” in a buttered 10-inch pie plate. Spread cottage cheese over bottom of spaghetti crust. Cook ground beef or sausage with onion until meat is brown. Drain off fat. Stir spaghetti sauce in browned meat; heat through. Put meat mixture on top of cottage cheese. Bake uncovered at 350 degrees for 20 minutes. Sprinkle cheese on top. Bake 5 minutes longer or until cheese melts.

Spicy Chicken Garlic Alfredo Pasta - Joanne T.


3 chicken breasts
2 bell peppers (red, orange or yellow)
2 t. minced garlic
2 T. olive oil
1 pkg. 2 oz. almonds slivered
1/2 t. crushed red pepper
1 bottle of classico roasted garlic alfredo sauce
Penne pasta 3/4 of a pkg.

1. Boil chicken and cut up in chunks
2. Cut peppers into slices
3. Put olive oil, peppers, crushed red pepper, garlic and almonds and saute
4. Add chicken and alfredo sauce
5. pour over cooked penne pasta

3 lemons - zested and juiced
1/4 cup pine nuts crushed to a paste
1 cup fresh grated parmesan cheese
Make a paste of the above ingredients

Water in pot
Salt the water, add Linguine Noodles
Boil till just right
Drain and stir paste mix over noodles
Garnish with parsley flakes and parmesan cheese

Boil Noodles (Linguine) in salted water

Fry chopped bacon - med. done
Saute chopped onions in olive oil
Add bacon to onions

Break 1 egg per person plus 1 extra egg
Beat eggs together

Stir all together and add to drained noodles
Put noodles back in pan to add mixture
Cook on low heat for 3 minutes stirring constantly
serve immediately

Beef & Zucchini Bake - Sherry W.


Set oven to 350 degrees
Brown 1 lb. lean ground beef
Then add
1 8oz. tomato sauce
1 t. salt (optional)
1/4 t. seasoned pepper
1/2 t. sugar
1/4 t. oregano
1 t. worcestershire
1/4 c. green onion
simmer for 5 minutes

Slice 1 medium zucchini into 1/2" slices
In greased casserole dish, layer zucchini with meat sauce and repeat 2 more times.
Mix 1 3oz. pkg. cream cheese - softened and 1/2 pt. sour cream.
Spread over last layer then sprinkle with 1/2 c. bread crumbs
Bake at 350 degrees for 35-40 minutes.
*Can us mashed crackers or potato chips instead of bread crumbs

1 lb. ground beef (browned and drained)
2 lb. (7 cups) zucchini - dice or slice
1/4 white onion chopped
10 oz. chicken soup
1 c. sour cream
1/4 c. butter
1 c. diced carrots (can buy canned)
2 c. seasoned stuffing mix

Cook zucchini and onion in boiling salt water until crisp (5-10 min.)
Drain well.
Combine soup and sour cream in lg. bowl.
Add carrots and meat and mix. Then gently fold in zucchini and onion and mix.
Melt butter and toss with stuffing. Mix and spread 1/2 of mix in bottom of pan and then fill with mix and top with rest of stuffing.  Bake at 350 for 30 minutes.

Cream Cheese Chicken - Heather W.


1 envelope Italian Salad Dressing Mix
1 stick butter
6 boneless, skinless chicken breasts, cubed
1 can cream of chicken or mushroom soup
1 8 oz. cream cheese

Melt butter and add italian dressing.  Cut chicken into cubes or strips.  Place in crock pot and pour butter mixture over and stir to coat.  Cover and cook on high for 2 hours.  Add soup and cream cheese.  Stir to melt and mix until creamy.  Serve over noodles, mashed potatoes, baked potatoes or rice.  Yum.  Freezes well.
