Amish Friendship Bread - Kristi D. (bread loaf) & Heather W. (muffins)



Amish Friendship Bread


Copy these instructions and pass them on to a friend with a starter


DO NOT use any kind of metal bowl or spoon for mixing

DO NOT REFRIGERATE. It’s normal for the batter to rise and ferment.

Should this recipe not be passed on to a friend the first day, be sure to tell them the day the starter batter is on when you give it to them.


DAY 1: Do nothing. This is the day you received the starter batter. The bag is dated.


Days 2 through 5: Just squeeze the bag once or twice each day.


Day 6: Mix dry ingredients in a non-metal bowl. Stir in milk until the mixture is smooth:

1 C. flour

1 C. sugar

1 C. milk


Days 7-9: Just squeeze the bag once a day. (You may need to release the accumulated gasses as the bag swells).


Day 10: Blend sugar and flour in a non-metal bowl. Stir in milk until blended.

1 1/2 C. flour

1 1/2 C. sugar

1 1/2 C. milk


Pour entire contents of the starter bag into the bowl and mix until smooth. Put 1 cup of batter into each of four gallon-size Ziploc bags, which you have dated with the day’s date. Keep one for yourself and give the other three to friends with a copy of this sheet.


To the batter that remains (which measures a little over 1 1/2 cups) add and mix well:

3 eggs

1 C. oil (or substitute 1/2 cup oil and 1/2 cup applesauce)

1/2 C. milk

2 tsp. vanilla


In a separate bowl, combine the following ingredients:

2 tsp. cinnamon 1/2 tsp. salt

1 C. sugar 1 1/2 tsp. baking powder

2 C. flour 1/2 tsp. baking soda

1 large box of instant vanilla or lemon pudding


Stir the dry ingredients into the batter until smooth. Chocolate chips, nuts, raisins, craisins, blueberries, chopped ripe bananas, etc. might be added at this point as well.


Preheat oven to 350 degrees F. Grease two large loaf pans. Mix an additional 1/2 cup sugar and 1 tsp. cinnamon in a separate bowl. Dust greased loaf pan with 1/2 of the mixture. Pour batter evenly into the loaf pans. Sprinkle the remaining cinnamon and sugar mixture over them. Bake for one hour at 350 degrees F. *I found this to be a little long - keep an eye on it. Cool until bread loosens evenly from the sides of the pan.

Clam Dip - Heather W.

Cheesy Vegetable Recipe‏
2 -3 bunches of broccoli
Small head of Cauliflower

½ bag carrots

8 oz. Velveeta

1 stick butter

1 can Cream of Mushroom Soup

Pre heat oven to 350 degrees. Grease a 9X13 pan. Wash and cut up veggies and boil for 2 minutes. Line greased pan with veggies. In a microwave-safe bowl melt Velveeta and butter by heating for 20 second intervals and stirring until melted and well mixed. Add the soup and mix well. Pour evenly over veggies. Cover and bake for 45 minutes to an hour. YUM.

Chicken Enchiladas - Heather W.

Chicken Enchiladas
8-10 flour tortillas
4-5 chicken breasts, cooked and cubed or shredded
4-5 green onions, sliced
small can mild green chilies, diced
1 can cream of chicken soup
4-6 oz sour cream (to taste)
shredded cheddar cheese (can also add mozzarella or use cheddar jack)
Sliced olives (optional)
Spray a 9X13 pan, or two 8X8 pans. Preheat oven to 350 degrees.
Mix together onions, chilies, soup and sour cream. Place approximately 1/2 of a chicken breast across an outer edge of a tortilla. Place a spoon-sized dollop of soup mixture on top of chicken and roll. Place end down in pan. Repeat until you have 8-10 enchiladas per 9X13 or 4-5 enchiladas per 8X8 pan. Spread remaining soup mixture evenly over top of enchiladas. Cover generously with shredded cheese. Sprinkle olives on top, if wanted. Cover tightly with foil and bake in oven for approximately 30- 40 minutes, or until heated through. Freezes really well. If baking after freezing increase cooking time to 60-70 minutes, or defrost first.

Cream Cheese Chicken - Heather W.


1 envelope Italian Salad Dressing Mix
1 stick butter
6 boneless, skinless chicken breasts, cubed
1 can cream of chicken or mushroom soup
1 8 oz. cream cheese

Melt butter and add italian dressing.  Cut chicken into cubes or strips.  Place in crock pot and pour butter mixture over and stir to coat.  Cover and cook on high for 2 hours.  Add soup and cream cheese.  Stir to melt and mix until creamy.  Serve over noodles, mashed potatoes, baked potatoes or rice.  Yum.  Freezes well.

No Peanut Butter Kiss Cookies - Heather W.


1/2 c. shortening
1/2 c. sugar & (a little extra to roll in)
1/2 c. brown sugar
1 egg
1 & 1/4 c. flour
3/4 t. soda
1/2 t. baking powder
48+ chocolate kisses

Cream shortening and sugars.  Add remaining ingredients except kisses.  Roll into balls, roll in sugar and place on ungreased baking sheet.  Bake @ 375 for 11-12 minutes.  Remove from oven and place a kiss in the middle and press sightly.

Christmas Rice Krispies - Heather W.


1/2 cup butter
40 large marshmallows
6 cups rice krispies

Melt butter and marshmallows slowly over low heat.  When totally melted, add food coloring for the holiday.  Add rice krispies and place in greased pan.  Put in cellophane bags or shape into holiday shapes.

8 oz cream cheese, softened
1/2 cup brown sugar
1 tsp vanilla

mix together until very well blended

add 1/2 bag of toffee baking pieces and mix by hand

Serve with sliced apples

Coca Cola Chicken - Heather W.


Coca Cola Chicken

Chicken, can use legs, wings, thighs and breasts
Ketchup
Can of regular Coke
Diced Yellow onion
Salt & Pepper
Brown Sugar
Oil

This can be done in a dutch oven outside, or in a dutch oven in the oven. It can also be done in an electric skillet. Brown the chicken pieces in a little bit of oil, I think it gives a little more flavor to use chicken still on the bone. I usually skin the chicken though. (Tip: to easily skin a chicken, grab the skin with a paper towel and pull off, it sticks to the paper towel and comes off very easily). Salt & pepper chicken. Make a single layer of chicken in the dutch oven, sprinkle with onions, cover generously with ketchup. Put another layer of chicken on top and repeat other ingredients. Pour Coke over layers, cover and cook approximately 30-45 minutes, or until chicken is done (350 degrees in oven). Baste the chicken with the sauce a couple times during cooking. When the chicken is cooked, add 1/4 cup of brown sugar to the sauce and mix in and again baste the chicken with it, let sugar cook through for about 5 minutes. Serve. It is really yummy to pour some sauce over the chicken.

Bruschetta - Heather W.


1 long french bread loaf, the skinny one
Fresh Tomatoes
Fresh Mozzarella
Fresh Basil (Can find in Produce section)
Balsalmic Vinegar
Olive Oil (optional)
 
Cut the french bread in to 1-2" thickness slices and place on foil-lined baking sheet.  You can put a little olive oil on each slice or butter, but not necessary.  Cut the fresh Mozzarella into thin slices that will cover your bread.  Cut tomatoes also into pieces that will cover the bread.  Place under the broiler just until the bread starts to brown and the cheese is melty.  While bread is baking, cut the fresh basil into thin strips.  Remove the bread, place the fresh basil on each slice and splash a little balsamic vinegar on each piece.  (You can also mix the vinegar with a little olive oil, but this is optional).  Serve immediately.  Yum!! (You can also use dried basil, but the fresh has a lot more flavor and aroma).
