Beef Stroganoff - Debi W.


1 lb round steak (stew meat is ok) and sprinkle 2 T flour on meat
2 T olive oil (shortening is ok)
1/2 c. chopped onion
1 clove minced garlic
1 6oz can mushrooms
1 can cream of mushroom soup
1 T. worchestershire
1/2 T. salt
1/8 tsp. pepper
1/2 c. sour cream

Melt shortening in pan and add meat. Brown floured meat, add onion, garlic and mushrooms. Combine remaining ingredients except sour cream and pour over the meat. Simmer until tender about 1 hour. Add sour cream just before serving. Serve over rice or noodles.

Calico Beans - Debi W.


1 lb. ground beef - browned
1 lb. bacon (Debi cooks hers but some people don't)
1/2 c. chopped onion
2 t. prepared mustard
4 t. vinegar
3/4 c. brown sugar
1/2 c. ketchup
1 lg. can Bush's baked beans
1 can green beans
1 can garbanzo beans
1 can canelli beans
1 can black beans
Drain all the beans except the bush's baked beans.
Brown ground beef, add onions and cook until onions are clear.  Add bacon, mustard, vinegar, ketchup and brown sugar.  Add beans.  Cook in crockpot on high 3 hours or in oven at 350 degrees for 40 min.
*To make this more healthy you could use turkey burger.  I used 7% fat ground beef and there wasn't any fat that cooked out.  Also turkey bacon or 1/2 the bacon, I used low salt bacon.  You can use any kind of beans you want to use, you don't have to use bushes, you could just use pork-n-beans and add a bit more ketchup, mustard, vinegar and sugar.

Super Saturday Cookie Exchange - Just Great Cookies - Debi W.


½ c shortening

1 cu brown sugar

½ c white sugar

2 eggs beaten

1 c canned evaporated milk

1 t. vanilla

2 ¾ cup flour

½ t. soda

½ t salt

½ c chopped walnuts

 

cream then add flour, soda, salt,

add nuts

 

375 degrees 10 minutes

 

frosting

boil ½ c brown sugar

¼ c butter

¼ c evaporated milk

for 3 minutes stirring entire time then add

2 c powdered sugar

frost fast

Dutch Oven Potatoes - Debi W.


1 potato per person plus 5
Cook 1 lb. bacon until crispy **keep grease
1-3 onions
Cheddar Cheese
butter
sprite

Put onion in bottom of dutch oven on top of grease (can cook onion in grease before hand).
Slice potatoes and layer on top of onions.
Pour some sprite over potatoes and dot with butter and add salt.

Use a 12 inch dutch oven
12 charcoal briquettes on bottom and 14 on top until done around 45 minutes.  Stir during cooking time. Put cheese and bacon on last and let melt.

Dutch Oven Meatloaf (Bishop Hansen's recipe) - Debi W.


4 lb. hamburger
2 pieces bread diced
2 eggs
garlic salt and worchestershire
Mix together
Layer half of meat mixture in bottom of dutch oven

Mix together:
chopped celery
chopped onion
Grated cheddar cheese
KC Masterpiece BBQ sauce
Put on top of meat mixture and then put remaining meat on top of sauce and seal edges.

When meatloaf is cooked thru, put BBQ sauce and cheese on top.

Upside-down Cake - Debi W.


1. Drain, reserving syrup - 1 can (8 1/2 oz.) sliced pineapple, apricot, or other fruit
2. Melt in a 8 x 8 x 2" pan - 3 T. butter or margarine
3. Add - 1/2 cup brown sugar and 1 T. reserved pineapple syrup
4. Arrange pineapple in bottom of pan

For Cake:
1. Cream together until light - 1/3 cup shortening and 1/2 cup granulated sugar
2. Add - 1 egg and 1 t. vanilla
3. Sift together - 1 cup flour, 1  1/4 t. baking powder, 1/4 t. salt
4. Add flour alternating with - 1/2 cup reserved pineapple syrup (water may be added to make the 1/2 cup)

Beat well.  Spread cake batter over pineapple slices.  Bake at 350 degrees for 40-45 minutes.  Cool 5 minutes; invert on plate.  Serve warm.

Raspberry White Chocolate Salad/Dessert - Debi W.


4 6oz. containers Raspberry Lite Yogurt (Yoplait)
2 sm. pkg. sugar free white chocolate instant pudding
16 oz. pkg. lite cool whip topping
pkg. frozen whole raspberries

In a large bowl, combine yogurt and pudding, mix very well.  Add thawed cool whip, mix well.  Add frozen raspberries, stir until mixed.

South West Salad - Debi W.

1 head lettuce
1 can black beans (drained and rinsed)
1 bag frozen corn (thawed)
some ranch dressing
some salsa
some tortilla chips (crushed)

In a big bowl, layer starting with lettuce, add beans and corn. Next, spread ranch dressing on top of corn (just covering the top). Then pour salsa on top (as much or as little as you like). To top it off crunch up some tortilla chips and sprinkle on top! Eat and enjoy!
