Macaroni Salad - Lorraine T.
Tex Mex Pasta Salad - Jenni B.
2-4 cups cooked pasta
1 cup mayo
1/2 cup Italian dressing
1/2 cup salsa
small can green chilies
1 1/2 t. chili powder
1 1/2 t. cumin
1 t. salt
1/2 t. pepper
Large can white kidney beans
1 bell pepper chopped (any color)
1/2 cup chopped celery (opt.)
1 can drained corn
2 cups chicken (opt.)
Mix everything except pasta. Add pasta last.
Pasta Salad - Melissa C.
10 oz. Rainbow Rotini (cooked)
1 green pepper
1 tomato
1 can olives
Italian Dressing
Pepperoni halves (if desired)
Cook pasta, drain, and mix with diced vegetables. Pour your desired amount of Italian dressing on top. Stir in pepperoni halves, if desired. Can also top with Parmesan cheese. Chill for a few hours.

3 lbs. potatoes
1/2 cup chopped onions
2 t. salt
1/2 cup mayo
1/4 cup veg. oil
1/2 cup cider vinegar
2 T. white sugar
2 T. dry parsley
Black pepper to taste (1/8 t.)
Peel potatoes, cut in half and boil for 25 minutes (until cooked)
In another bowl, wisk together onions, mayo, oil, vinegar, sugar, parsley, salt and pepper.
When potatoes are cooked (should be soft) mash with potato masher then gently stir in liquid mixture.
Let stand 1 hr. in fridge.

Strawberry Almond Chicken Salad - Kristi D.
1 pkg. mozzerella/parmesan shredded cheese mix
Toasted or candied slivered almonds (to candy almonds, cook 3/4 cup sugar and small pkg. almonds on stovetop over med. heat stirring constantly until sugar is melted covering almonds. Spread out on cookie sheet and let cool. Break up after cooled.)
4-6 Chicken breasts cooked and cubed
Sliced Strawberries
Can add purple onion slices if wish
Dressing:
1/4 cup purple onion
1 cup sugar
2 t. dry mustard
1 1/2 t. salt
1/2 cup red wine vinegar
Blend dressing ingredients together and slowly add in 1 cup oil.
Toss salad and dressing together just before serving. **I usually don't use all of dressing.

Southwestern Corn and Bean Salad - Nicole K.
2 cans black beans, rinsed
1 red onion, diced
Cilantro, chopped
1 red bell pepper, diced
1 yellow bell pepper, diced
3 avocados, diced
1-2 jalapeno peppers
Dressing:
6 T. olive oil
3 limes squeezed of juice
1 T. minced garlic
1 t. salt
1 t. pepper
1/2 t. coriander
1 t. ground cumin
1/2 t. paprika
1 t. chili powder
Pour over salad 30 minutes before serving. Can also serve as a salsa with chips.
Bowtie Salad - Sherrie W.
I totally missed taking a picture of this yummy salad. Sorry:(
1 can of mandarin oranges drained
2 c. red grapes sliced
1/2 c. cashew pieces
4 green onions sliced
1 c. petite peas
3/4 t. salt
In bowl, add the entire above ingredients together. Prepare a 12 oz. box of bowties macaroni (follow directions on box). Mix in 3/4 cup of miracle whip. Let it sit until the bowtie noodles are cooled down. Chill and serve. (6 servings)

South West Salad - Debi W.
1 can black beans (drained and rinsed)
1 bag frozen corn (thawed)
some ranch dressing
some salsa
some tortilla chips (crushed)
In a big bowl, layer starting with lettuce, add beans and corn. Next, spread ranch dressing on top of corn (just covering the top). Then pour salsa on top (as much or as little as you like). To top it off crunch up some tortilla chips and sprinkle on top! Eat and enjoy!
