1 can drained corn
1 can black eye peas
1 chopped tomato (or more)
1 bunch cilantro
1 small bunch green onions
2 chopped avocados
1 t. cumin
1/8 t. pepper
3/4 t. salt
1/4 c. red wine vinegar
1/4 c. olive oil
2 cloves garlic
Mix well. Better if marinated at least 1 hr.
